Dal Makhani (Maa Ki Dal)

Indian Punjabi dal makhani, also spelled daal makhani or dal makhni, and called Maa Ki Dal on our menu. Whole black urad lentils simmer overnight, a full 24 hours, before they are finished with butter and a touch of smoke. The long cook breaks the lentils down so the dal turns creamy on its own, without relying on heavy cream. It's deep, smoky and vegetarian.
